January Meal Plan

We have seriously been so bad. Like beyond bad, eating out waaayy too much, for far too long. I was having a huge meal planning mental block and asked my Facebook friends what they were having for dinner. The results inspired me to not only plan for the week (which was my original intention), but to plan out the rest of January! I’m so thrilled to be getting back to home cooked meals. I hope this post inspires someone to do the same!

All our meals are kid & daddy friendly. They are pretty picky.
I’ll make a note if I’m changing or adding something “fun” for my eclectic taste buds, as well as if something is freezer meal worthy with the leftovers.

Dr. Pepper Pulled Pork Sandwiches
Sweet Potato Fries & Slaw
*crockpot meal *freeze leftovers
{yeilds 3-4 dinners}

1.7 Wednesday
Salisbury Steaks
Mashed potatoes & Corn

1.8 Thursday
Loaded Baked Potato Casserole
*Daddy’s Friday work lunch*

1.9 Friday
Bbq Chicken Thighs/Legs
Roasted Brussel Sprouts & Sweet Potatoes, Rice Pilaf
*Cook entire chicken package and
Freeze leftovers for 1 extra meal*
{I like to add the veggies to eggs for breakfast the next day}

Crockpot Cincinnati Chilli
*freeze leftovers*
{Yields 3-4 meals}

*Brynlee’s Birthday Party*
{We are having pizza and cake at the ice arena. 3-5 is a weird time. So we are gonna have a lighter dinner later…}

Poverty meal (seriously so delicious, never any leftovers)

Pulled Pork Tacos  {from leftovers}
with slaw & cilantro lime cream
{Ill be adding avocado to mine}

Stuffed Peppers & Perogies
(No one likes peppers but me so they can eat the filling)

*Brynlee’s 4th Birthday!*
{We are going to see Frozen on Ice. Grandma is watching Tyler. I asked B what she wanted and she said Macaroni & Cheese so….}
Loaded Butternut Squash Mac & Cheese… omg
{Save leftovers for lunches this week, add nuggets or fish sticks}

Roasted sweets & sprouts

Chilli Dogs {from leftover Chilli}

Gonna have a BIG breakfast!
Bacon & Egg Grilled Cheese Sandwiches -yum!
So we’ll skip lunch and have leftover soup for dinner.

Meatball Subs
{Make a huge batch to freeze for a quick spaghetti & meatball lunch or dinner}

Whole Roasted Chicken {shred and freeze chicken for 2 more meals!}
Roasted Carrots, Potatoes, Green Beans *save veggies for tomorrow*

1.30 Friday
Sloppy Joes
Tots
*Leftover veggies*

1.31 Saturday
Chicken Salad & Grape Croissants
*from leftover shredded chicken*
Sweet Fries

And there you have it!
Plus I won’t have used up all the leftovers from several meals!
So February is well on it’s way!

  1. Try not to be too hard on yourself for eating out. Life is hard. If you can make it a little easier by having someone else make your food and you can afford the cost, you should take advantage.

    Your meal plan does sound delicious though!
