Crockpot Garlic-Lemon-Caper Chicken Breasts

Trying something new tonight for dinner. I love the convenience of my crockpot but sometimes I get bored with my options… it’s always a roast or … yeah, that’s all I can think of at the moment.
This dish is half crockpot, half stove-top.
Here’s what you need and what to do with it:
2 boneless, skinless chicken breasts.
1 teaspoon Oregano- I used mrs. dash Italian blend
1/4 teaspoon pepper
1/2 teaspoon salt
Rub mixture onto chicken, set aside.

2 tablespoons butter
Brown chicken in pan with butter, 3-5 minutes on each side.
Put chicken in crockpot on high.

With remaining butter leftover in pan add:
1/4 cup water
1/4 cup chicken stock or a bullion cube
1 teaspoon or 2 cloves of garlic
2 Tablespoons capers- my favorite!
3 Tablespoons lemon juice
Heat through and pour over top of chicken in crockpot.
Cook for 3 hours.

Right before serving add
1, 8oz package of cream cheese and blend thoroughly.

I’m serving this shredded, over top of rotini past with garlic bread! YUM! you could also serve with rice or mashed potatoes along side of some yummy veggies 🙂

This dish {with pasta} serves 4 people (or 2 plus a 2 year old with seconds) for $8.75!!!
TOTAL.
AMAZING!

This one is a keeper! It’s so versatile too, so I’m excited to change up the side dishes in the future to create differed flavor profiles. Let me know what you think mamas!!!
